Ahh guys, this salad is DA BOMB!
And yes, I’m totally using that 2006 word, because yeah I’m retro like that 💁

November has the perfect weather for all things apple! It is cold outside, a little rainy, and after a long walk in the forest it is the perfect time for a slice of Dutch apple pie (which is the best apple pie!).
Or, you could of course just make this Baked Apple Crisp recipe and treat your family to a delicious dessert!
With my trip to Thailand in mind, I recently started to look more into Asian style food and recipes, because I’m actually not that familiar with the Asian kitchen! Yes, I love sushi and I’ve made some Indian curries a long time ago, but other than that I’m absolutely clueless on which spices to use, what herbs, what produce, what kinds of cooking methods, etc etc.
These Autumn Apple Pancakes are amazing guys! Perfect for a lazy Sunday breakfast or brunch now that the days are getting colder and you want a warming breakfast.
If you’ve been following this blog for a while, you probably noticed that I’m a huuuge sucker for the combination of apple and cinnamon: my favourite oatmeal is this Apple Pie Oatmeal and my favourite muffins are these Apple Muffins with Walnuts, Cinnamon and Zante Currants. They are both so so good!! The combination of apples + cinnamon is just amazing to me. It reminds me of long autumn strolls in the woods, the beautiful red, orange and yellow colours of the trees, reading a book by the fireplace, etc.
Although I am actually a huge fan of (green) smoothies, there aren’t many smoothie recipes on That Healthy Kitchen — only one to be exact!
To be honest though, my smoothies are actually almost always the same: some fresh spinach, a banana for sweetness and some seasonal fruit + water. Super simple, super easy, and almost not worthy of being called a recipe.
Guys, these brownies are amazing!
For me, they are the perfect combination of healthy (pumpkin, nuts, cacao, oatmeal) and guilty pleasure (pure chocolate, lots of sweet and sticky dates). As I’ve said before, I’m trying to up my veggie intake a little, and these Pumpkin Brownies with Nuts and a Chocolate and Date Caramel Drizzle are just perfect for that. Per slice, these contain the equivalent of almost 70 gram pumpkin, which is of course not all of your daily recommended intake of vegetables, but it is definitely a good start.
These brownies might be a bit more dense than the brownies you’re used to, but don’t let that discourage you from making them. Their taste is amazing and they are very filling too. Plus, they have an overwhelmingly delicious chocolate flavor 🍫🙌
With winter approaching, I prefer easy, cosy dinners that are warming, delicious and nutritious. And what is more cosy and simple than soup?!
Admittedly, this Creamy Red Lentil and Coconut Soup isn’t the quickest (check out this tomato soup if you want a quick soup), but it is very budget friendly and perfectly spiced.
