Spiced whole wheat high protein chia pancakes

You only need 5 ingredients for these delicious pancakes. They are made with whole wheat for that extra flavor, and of course for the extra fibers! For the protein, I added quark, which is a very fresh cheese, similar to cottage cheese. However, you usually eat it like you would greek yoghurt, as part of breakfast with some granola and fresh fruit for example. It’s mostly popular in Western-Europe, so if you cannot find it, you can replace it with greek yoghurt or any kind of unsalted cottage cheese. Lastly, the pancakes are flavored with organic herbal tea! The one I used, Hug in a Cup from Natural Temptation, is a mix of green tea (35%), cinnamon (20%), cardamom (10%), ginger (10%), fennel seeds (10%), cloves (5%), black pepper (5%) and star anise (5%).  Continue Reading…

Apricot tartelettes with cashew cream, strawberries and passion fruit

Can you believe that you only need 5 ingredients for these tartelettes?! Cashews, dried apricots, oats, fresh strawberries and fresh passion fruit. That’s it! The trick is using ingredients for multiple things. I made the base from cashews, dried apricots and oats, for the filling I also used the cashews and apricots, and then I topped the tartelettes off with fresh strawberries and passion fruit. Multi purpose ;)

Asian Heirloom Tomato Salad

A few years ago, when I had only just started blogging, I was invited to a food bloggers event about tomatoes. We had a nice afternoon, during which we got a tour of the greenhouses, an explanation of the different tomato varieties they cultivated, and of course we could taste some delicious dishes made with their tomatoes. Even though this was quite some time ago, there is one thing that I tasted that afternoon, that I can still remember like it was just yesterday: an “Asian” tomato salad with cilantro and spring onion, and the most amazing dressing with umami flavors. It was just simply amazing.

Breakfast popsicles with granola, raspberries and yoghurt

Every month, the food blog swap is organized by several Dutch foodbloggers. The idea is that you make (and adapt) a recipe from another blogger that signed up. That way, you get to know more blogs (which is always fun), and try out someone else’s recipes. This month I decided to join for the first time, and I don’t regret it at all, because the blog I got assigned to is absolutely beautiful! Cheesy queso cauliflower dip

I imagine you might look at the pictures of this post, and be like ‘hmmmm, pretzels and cheese dip…. That’s not really THK approved… right?’ Wrong! This dip actually has loads of cauliflower in it! And that doesn’t make it gross, or yum for delicious food, but just yum. I bet that if you would make this for friends, and just told them it is a cheese dip, they would not even notice the cauliflower in there. I promise you, it is non detectable if you don’t know it’s there! Lately I’ve been really loving cauliflower, and its versatility. It is great to use as a rice alternative, or in this dip of course!
