This quinoa salad kind of falls in the same category as my Grain Salad with Raspberries, Basil and Walnuts. Partly because they are delicious, but mostly because they are both super portable and I love taking them with me to uni for lunch or as a delicious study snack.
Drinking enough water on a day can be quite a challenge for me, because – let’s be honest about it – drinking water can be a bit boring. Often I spice up my water with some lemon or lime juice, or infuse it overnight with some fresh mint. There was also a time when I was really into drinking cold brewed green tea. Often I drank more than a liter of it per day! Although I try to limit my caffeine intake now, I still really enjoy a nice glass of unsweetened cold brewed tea.
When you cold brew tea, the result is much smoother with less of an edge from tannins, than if you would brew the tea with hot water. If you are normally not so fond of green tea, trying a cold brew once really makes a huge difference. The same goes for this pretty pink Cold Brewed Jamaican Hibiscus Iced Tea. Although herbal teas tend to have less bitterness than normal teas in general, hibiscus tea can sometimes turn out a little bitter too. Cold brewing it definitely gets rid of that completely.
The creation of these Nutty Raspberry Streusel Bars was actually quite random. I had yet another batch of my Two Ingredient Raspberry Jam in my fridge that was waiting to be used, and I had some almond flour and loooots of walnuts laying around the house. That, plus a major sweet craving and some spare time resulted in the creation of these super delicious Nutty Raspberry Streusel Bars 💕
PB & J is of course a classic sandwich variation, and I assume that there are plenty of people that have a peanut butter and jelly sandwich as breakfast – okay, perhaps not that many here in the Netherlands as the combination is not as popular as in the US, but you get the idea.
The point is that white bread, processed peanut butter and store-bought jam is really not that good for you, unfortunately. Now, of course it would be easy to simply replace those ingredients, but that is also just a bit boring, so I created this PB & Jelly Oatmeal variety!!
Ahh guys, I don’t know why or how come but I’m totally into making condiments at the moment! I guess it is because I’m back at uni now, and I have to plan my meals a bit more – hence the super portable (and delicious!!) grain salad from last week.
Although making your own jam, pesto or pasta sauce takes a little more time than just buying it in the store, it really is worth the extra effort if you take into account the amazing flavor and cheaper price of home-made goods!
So, this Roasted Red Pepper Hummus is the newest addition to my condiment stuffed fridge haha, but I don’t mind! It is so delicious!! When you roast red peppers, they get this really amazing sweet and sultry flavor and texture, which is just simply wonderful. For this recipe I roasted my own peppers, as I had the time and it is cheaper, but if you’re short on time you can of course use store-bought roasted red peppers, just make sure to use a little less oil.
I’m not gonna spend a lot of time talking about this salad, because it just simply is amazing, and you have to try it too!! You’ll love it ☺
For the last couple of weeks, salads based on grains like these have been my lunch staple, as they are:
1. Portable
2. Grab-and-go
3. Delicious
4. Make-ahead
5. Filling
6. Customizable
7. Gluten-free (or not, if you want to!)
etcetera etcetera.
I could compile a whole list, of why exactly I love grain based “salads” like these so much. I say “salads” because in my pre-grain based salad mind, a salad is something super boring, with an iceberg lettuce base, some watery cucumbers and tomatoes on top, and if you were lucky you might get some mushy croutons.
Yeah… That doesn’t really gets me excited for food. Buuut, this salad is completely different! There is no iceberg lettuce involved, no watery cucumber and definitely no mushy croutons. I was actually thinking about not calling this a salad, but then, what would it be? Thesaurus describes it as a dish of vegetables, and the synonyms are: potato salad; coleslaw; greens; fruit salad; mixed greens; tossed salad; and Waldorf salad. Not really much to work with right?! So for now I’ll just stay with salad, just know that this is a special salad 😉

I swear, this pesto is way better than all the “normal”, non-vegan, processed pesto’s I’ve ever had, and it is might very well be the easiest recipe on my blog… Although this two ingredient raspberry jam is also super quick and easy.
