Apple Cinnamon Pancakes

These Autumn Apple Pancakes are amazing guys! Perfect for a lazy Sunday breakfast or brunch now that the days are getting colder and you want a warming breakfast.

If you’ve been following this blog for a while, you probably noticed that I’m a huuuge sucker for the combination of apple and cinnamon: my favourite oatmeal is this Apple Pie Oatmeal and my favourite muffins are these Apple Muffins with Walnuts, Cinnamon and Zante Currants. They are both so so good!! The combination of apples + cinnamon is just amazing to me. It reminds me of long autumn strolls in the woods, the beautiful red, orange and yellow colours of the trees, reading a book by the fireplace, etc.

Pumpkin Brownies with Nuts and a Chocolate and Date Caramel Drizzle

Pumpkin Brownies with Nuts and a Chocolate and Date Caramel Drizzle

Guys, these brownies are amazing!

For me, they are the perfect combination of healthy (pumpkin, nuts, cacao, oatmeal) and guilty pleasure (pure chocolate, lots of sweet and sticky dates). As I’ve said before, I’m trying to up my veggie intake a little, and these Pumpkin Brownies with Nuts and a Chocolate and Date Caramel Drizzle are just perfect for that. Per slice, these contain the equivalent of almost 70 gram pumpkin, which is of course not all of your daily recommended intake of vegetables, but it is definitely a good start.

These brownies might be a bit more dense than the brownies you’re used to, but don’t let that discourage you from making them. Their taste is amazing and they are very filling too. Plus, they have an overwhelmingly delicious chocolate flavor 🍫🙌

Simple Vegan Banana Bread

Simple Vegan Banana Bread

I like my banana’s unripe. As in almost green, and still a little on the firm side. Actually, you just have two types of people:
1. Those who like their banana’s with brown spots, love the mushiness and the overly present banana smell and flavor.
2. And on the other hand, people who like their banana’s on the green-yellow side of the spectrum, still a bit firm and without an overly banana taste –> Meee! 🙋

Nutty Raspberry Streusel Bars

Nutty Raspberry Streusel Bars

The creation of these Nutty Raspberry Streusel Bars was actually quite random. I had yet another batch of my Two Ingredient Raspberry Jam in my fridge that was waiting to be used, and I had some almond flour and loooots of walnuts laying around the house. That, plus a major sweet craving and some spare time resulted in the creation of these super delicious Nutty Raspberry Streusel Bars 💕

Salted Peanut Butter Cookies

These amazing salted peanut butter cookies are heaven on earth. I’ve always loved the combination of sweet and salty, and in this cookie the two flavors really complement each other. If you take a bit of one of these little pieces of heaven, the crumbly texture will immediately start to melt in your mouth… Yes, they are that good, believe me!

Apple Muffins with Walnuts, Cinnamon and Zante Currants

Apple Muffins with Walnuts, Cinnamon and Zante Currants. Photo and recipe by That Healthy Kitchen

I know these muffins are actually more like an autumn recipe, but since apples are practically available year round nowadays, I will share it anyway, because they are DELICIOUS! These muffins are great to make a big batch of, as they will keep for about a week in the fridge without the topping – although I bet they won’t last that long haha.
