Cold Brewed Jamaican Hibiscus Iced Tea

Cold Brewed Jamaican Hibiscus Iced Tea

Drinking enough water on a day can be quite a challenge for me, because – let’s be honest about it – drinking water can be a bit boring. Often I spice up my water with some lemon or lime juice, or infuse it overnight with some fresh mint. There was also a time when I was really into drinking cold brewed green tea. Often I drank more than a liter of it per day! Although I try to limit my caffeine intake now, I still really enjoy a nice glass of unsweetened cold brewed tea.

When you cold brew tea, the result is much smoother with less of an edge from tannins, than if you would brew the tea with hot water. If you are normally not so fond of green tea, trying a cold brew once really makes a huge difference. The same goes for this pretty pink Cold Brewed Jamaican Hibiscus Iced Tea. Although herbal teas tend to have less bitterness than normal teas in general, hibiscus tea can sometimes turn out a little bitter too. Cold brewing it definitely gets rid of that completely.

Nutty Raspberry Streusel Bars

Nutty Raspberry Streusel Bars

The creation of these Nutty Raspberry Streusel Bars was actually quite random. I had yet another batch of my Two Ingredient Raspberry Jam in my fridge that was waiting to be used, and I had some almond flour and loooots of walnuts laying around the house. That, plus a major sweet craving and some spare time resulted in the creation of these super delicious Nutty Raspberry Streusel Bars 💕

Strawberry Rhubarb Lemonade with Lime, Mint, Vanilla and Ginger

Strawberry Rhubarb Lemonade with Lime, Mint, Vanilla and Ginger. Recipe and photo by That Healthy Kitchen

Rhubarb is one of those veggies that you almost can’t call a vegetable in the classical eggplant-cucumber-peas kind of way. It’s flavor is too sour and sweet, and it just contains too much liquid to be cooked like normal vegetables.

But… I love it nevertheless! ❤️

I think strawberry rhubarb crumble is one of the most delicious desserts you can have, and a simple rhubarb compote served with some yoghurt makes a great breakfast. Unfortunately though, other than using it for dessert or breakfast, rhubarb is not very versatile.

Two Ingredient Raspberry Jam

Two ingredient raspberry & chia jam. Recipe and photo by That Healthy Kitchen

To be honest, I’ve never liked chia pudding.

To be really honest, I absolutely and totally hate them.

That weird, slimy texture, and those tiny crunchy balls… Nope, those puddings are not meant for me. Maybe I’ve just never made it the right way, or maybe it’s just that my tastebuds are weird, but I guess I’ll just have to live with it haha.

However, after all my downright horrible chia pudding experiments, I was still left with a whole bag of chia seeds. Of course they can be used as an egg replacer, in smoothies and to thicken things in general, but with my 500 gram (yes, 500 gram chia seeds – I don’t know what I was thinking when I ordered them at iHerb) I really needed some other purposes for them to finish them before the expiration date.

Salted Peanut Butter Cookies

Salted peanut butter cookies. Photo and recipe by That Healthy Kitchen

These amazing salted peanut butter cookies are heaven on earth. I’ve always loved the combination of sweet and salty, and in this cookie the two flavors really complement each other. If you take a bit of one of these little pieces of heaven, the crumbly texture will immediately start to melt in your mouth… Yes, they are that good, believe me!

Apple Muffins with Walnuts, Cinnamon and Zante Currants

Apple Muffins with Walnuts, Cinnamon and Zante Currants. Photo and recipe by That Healthy Kitchen

I know these muffins are actually more like an autumn recipe, but since apples are practically available year round nowadays, I will share it anyway, because they are DELICIOUS! These muffins are great to make a big batch of, as they will keep for about a week in the fridge without the topping – although I bet they won’t last that long haha.

Strawberry Rhubarb Crumble

Strawberry and rhubarb crumble with walnuts. Recipe and photo by That Healthy Kitchen

Yesterday, I finally saw rhubarb at my local grocery store that was actually fresh and ripe, so I immediately went for it – obviously! – and decided to put it to good use immediately. Personally, I just really love the classic combination of rhubarb and strawberries, so I decided to do something with that, and I was also inspired by a dish my grandmother and mothers used to make very often: Brusselse appelen (Brussels apples). Basically it is just an apple crumble recipe with a very yummy, but quite unhealthy and very non-vegan crust.
