Sweet Potato and Lemon Baked Falafel

Sweet Potato and Lemon Baked Falafel. Photo and recipe by That Healthy Kitchen

Oh my god. Guys, this really might just be the best falafel I’ve ever had. So so so delicious and – important for those of you who want to stay on track with their lifestyle/diet – really healthy too! As these are baked instead of fried, you will get a lot less fat than the normal ones, and besides the oil from the sesame seeds this recipe is fat free yay. I’ve never imagined myself looking for fat free recipes, but recently I’ve started using My Fitness Pal, and I’ve realized how incredibly kcal dense oil actually is. Do any of you use it too? Anyway, if you want these to taste more like the original ones, you can of course bake them with a little olive or coconut oil or just fry them if that is more your thing. Just know that even without all the grease these are still really really delicious :)

Apple Pie Oatmeal. Recipe and photo by That Healthy Kitchen

This breakfast is definitely one of my favorite breakfasts EVER. I’ve been making this for quite some time now, but I didn’t photograph it earlier for the blog, as – lets just be honest about it – it is so so so difficult to make oatmeal look tasty! Sometimes I even have to remind myself that what I’m going to have for breakfast is actually really delicious and healthy and good for you… So, I never even tried to photograph it, until this weekend! So hereby I present to you: the best oatmeal you’re ever going to have, without all the nasty stuff and added sugars and the like.

Personally, I think it is a great solution to avoid having to cook each and every day, especially if you don’t have the time for that.

And no, I’m not gonna rename them to bomb burgers haha, although it sounds kind of cool. So, if you have a cool name, let me know!! I’ll give you credit of course ;)

Strawberry Rhubarb Crumble

Strawberry and rhubarb crumble with walnuts. Recipe and photo by That Healthy Kitchen

Yesterday, I finally saw rhubarb at my local grocery store that was actually fresh and ripe, so I immediately went for it – obviously! – and decided to put it to good use immediately. Personally, I just really love the classic combination of rhubarb and strawberries, so I decided to do something with that, and I was also inspired by a dish my grandmother and mothers used to make very often: Brusselse appelen (Brussels apples). Basically it is just an apple crumble recipe with a very yummy, but quite unhealthy and very non-vegan crust.

Cherry Garcia Muffins

Chocolate and cherry (cherry garcia) muffins. Recipe and photo by That Healthy Kitchen

These muffins… These are so delicious, I can’t even explain. Did you ever had the Ben & Jerry’s flavor Cherry Garcia? Personally, I’ve always loved the combination of cherries and chocolate, and for this muffin I was inspired by the classic Ben & Jerry’s flavor. Now, I know these may not look like the prettiest muffins, but men, these are really really good! And if you feel a little fancy, you can just drizzle them with some dark chocolate, like I did with some of them.
