November has the perfect weather for all things apple! It is cold outside, a little rainy, and after a long walk in the forest it is the perfect time for a slice of Dutch apple pie (which is the best apple pie!).
Or, you could of course just make this Baked Apple Crisp recipe and treat your family to a delicious dessert!
The great thing about this apple crisp, is the fact that you can very easily make it ahead, and bake it when you’re ready. Or, if you’re really short on time, you could even bake it a day (or two) ahead and just reheat it when you need it! Personally, I think that a lot of recipes taste better the next day, as the flavors had more time to develop, and the same goes for this Baked Apple Crisp recipe.
This Baked Apple Crisp is a little different from your good old apple crumble, as the topping is a little dryer (and healthier!), and much more crunchy crispy than what you’re used to probably. The apples underneath however are deliciously sweet and soft, with some sticky raisins and flavorful walnuts on top.
If you don’t have thick rolled oats, which I recommend as the Apple Crisp will be much crispier, you can also use normal rolled oats. The same goes for the oat flour: you can easily make it yourself by blending some rolled oats in your blender or food processor, but it can also be replaced by e.g. spelt flour. Keep in mind though, that spelt flour is not gluten free.

Cook time: 45 to 60 mins
Total time: 1 hour to 1 hour and 15 mins
Yield: 6 servings
Ingredients
4 large apples
3 teaspoons cinnamon
1/3 cup (50 gram) raisins
2/3 cup (80 gram) walnuts
1/4 cup (50 gram) coconut sugar
1 cup (110 gram) thick rolled oats
1/2 cup (45 gram) oat flour
1/4 cup (50 gram) coconut oil, liquid
Instructions
1. Preheat your oven to 200 degrees Celcius.
2. Core and slice the apples.
3. In an oven-safe dish, combine the apple slices and 2 teaspoons cinnamon until the apple slices are evenly coated with cinnamon. Top with a layer of raisins and half the walnuts.
4. In a bowl, combine the remaining ingredients: 1 teaspoon cinnamon, half of the walnuts, coconut sugar, thick rolled oats, oat flour and coconut oil. Mix until combined, and sprinkle on top of the apple slices.
5. Bake for 45 to 60 minutes (depending on the thickness of your apple slices), or until the apples are tender. To prevent the apples from dehydrating, rather than cooking, you may want to cover your oven-safe dish with some aluminium foil. Best served warm, or re-heated the next day when the flavors have really infused the whole dish.
