It has been so hot in the Netherlands lately that all I have been wanting to eat is ice cream and popsicles! For the coming week, they even predicted a heatwave 😱 Since I’m not used to hot weather at all, I need all the help I can get to cool off, and my latest popsicle creation, these with mango and coconut water, are a life saver! The Obrigado coconut water helps to restore my mineral balance, while the mango brings in antioxidants and vitamins. For a fun and delicious twist I also added some lime zest!
These pretty cacao coconut popsicles are the perfect healthy treat during the warm summer months, and they are so incredibly easy to make! You only need three ingredients: cacao, (full-fat) coconut milk, and maple syrup or any other sweetener that you like.
On top of that, these babies just happen to be vegan as well, and suitable for people with nut- or gluten allergies! They are super chocolatey and rich, and they just scream “SUMMER” in capital letters. It has been incredibly dry and hot in the Netherlands for the last month or so, and these popsicles have totally saved me from dying from the heat haha.
After the Lyme disease challenge yesterday, I still had some limes left. I am thinking of making a couple lime recipes in honor of the Lyme disease challenge, and this is the first one: Lime banana ice cream. I already have another recipe using lime as an important ingredient here.
This is really so so good! And you will only need two (!!) ingredients to make this crazy delicious (and healthy) dessert. However, you do need a powerful blender or food processor. If you don’t have one, you can also make this using an ice machine.
