I am so happy! It has finally become spring here in the Netherlands, and with temperatures of 15 to 20 degrees Celcius you can even call that warm haha. I am definitely a lime lover, especially in drinks, because MOJITO! Yum! Today for breakfast Marco and I had this amazing mocktail smoothie. Because of the pressed lime and lime zest it really is super delicious and has that incredible lime zing. The added yoghurt also brings in some coolness, so this is the perfect summer smoothie in my opinion. We normally have smoothies as breakfast, but this one is delicious enough to have as a small lunch or as a snack! The secret ingredient here really is the lime zest, it really adds an intense flavor to the smoothies.

Lime Banana Nicecream

After the Lyme disease challenge yesterday, I still had some limes left. I am thinking of making a couple lime recipes in honor of the Lyme disease challenge, and this is the first one: Lime banana ice cream. I already have another recipe using lime as an important ingredient here.

This is really so so good! And you will only need two (!!) ingredients to make this crazy delicious (and healthy) dessert. However, you do need a powerful blender or food processor. If you don’t have one, you can also make this using an ice machine.

Clubsandwich with Tomato Hummus

Today I was really feeling like making some hummus. I love making hummus myself. It is super easy, quick, and cheaper and tastier than store-bought hummus, plus it is super easy to adjust the hummus to your personal taste. Add some beetroots if you like an earthy flavor, tomatoes if you like it a little sweet or roasted pepper for a smokey flavor. For this clubsandwich, I made some tomato hummus. I really like using dried tomatoes for this, as the flavor is a bit more intense than with fresh tomatoes, but if you don’t have them dried, using fresh tomatoes is no problem. I garnished the sandwich with some fresh tomatoes, half an avocado and some iceberg lettuce. Great lunch!

Banana Peanut Butter Cookies

These babies are soooo good! Amazing taste, naturally high in protein and chock full of potassium, magnesium and manganese, plus they are extremely easy to make, just mix everything together in a bowl, pop them in the oven for a couple minutes and you are done. I love making these at the start of the week to take with me during long uni days or to eat as a post-workout snack.

Guys, I have to admit something… My blog might be called That Healthy Kitchen, but sometimes I just really crave unhealthy stuff. Just like most of you I think. So, this afternoon I was really longing a super unhealthy, classic American burger menu, with fries and mayonnaise! Not very healthy, and not really skinny either. Since I had some time on my hands I figured I could also just make my own. This is definitely cheaper than getting a real burger menu at your local fast food restaurant, but also much better for your body and probably tastier too. What else do you want?!
