Pumpkin pancakes

If you sometimes have problems with getting enough veggies in on a day – like me – these pumpkin pancakes may be a great addition to your diet. They are rich in nutrients and super yummy! Plus they have a beautiful and completely natural orange colour. I love topping them with a little dollop of coconut yoghurt and some cinnamon or some banana coins and blueberries.

Total time: 20 mins
Serves: about 6 pancakes

Ingredients
2 eggs
75 gram pumpkin puree (preferably homemade)
1/4 teaspoon baking soda
1 1/2 teaspoon pumpkin spice
20 gram oat flour
1 tablespoon coconut sugar

Instructions
1. Whisk the eggs, pumpkin puree, baking soda, pumpkin spice, oat flour and coconut sugar together in a big bowl.
2. Bake the pancakes on both sides over medium fire with some coconut oil.
