It has been so hot in the Netherlands lately that all I have been wanting to eat is ice cream and popsicles! For the coming week, they even predicted a heatwave 😱 Since I’m not used to hot weather at all, I need all the help I can get to cool off, and my latest popsicle creation, these with mango and coconut water, are a life saver! The Obrigado coconut water helps to restore my mineral balance, while the mango brings in antioxidants and vitamins. For a fun and delicious twist I also added some lime zest!
These pretty cacao coconut popsicles are the perfect healthy treat during the warm summer months, and they are so incredibly easy to make! You only need three ingredients: cacao, (full-fat) coconut milk, and maple syrup or any other sweetener that you like.
On top of that, these babies just happen to be vegan as well, and suitable for people with nut- or gluten allergies! They are super chocolatey and rich, and they just scream “SUMMER” in capital letters. It has been incredibly dry and hot in the Netherlands for the last month or so, and these popsicles have totally saved me from dying from the heat haha.
You only need 5 ingredients for these delicious pancakes. They are made with whole wheat for that extra flavor, and of course for the extra fibers! For the protein, I added quark, which is a very fresh cheese, similar to cottage cheese. However, you usually eat it like you would greek yoghurt, as part of breakfast with some granola and fresh fruit for example. It’s mostly popular in Western-Europe, so if you cannot find it, you can replace it with greek yoghurt or any kind of unsalted cottage cheese. Lastly, the pancakes are flavored with organic herbal tea! The one I used, Hug in a Cup from Natural Temptation, is a mix of green tea (35%), cinnamon (20%), cardamom (10%), ginger (10%), fennel seeds (10%), cloves (5%), black pepper (5%) and star anise (5%). Can you believe that you only need 5 ingredients for these tartelettes?! Cashews, dried apricots, oats, fresh strawberries and fresh passion fruit. That’s it! The trick is using ingredients for multiple things. I made the base from cashews, dried apricots and oats, for the filling I also used the cashews and apricots, and then I topped the tartelettes off with fresh strawberries and passion fruit. Multi purpose ;)
A few years ago, when I had only just started blogging, I was invited to a food bloggers event about tomatoes. We had a nice afternoon, during which we got a tour of the greenhouses, an explanation of the different tomato varieties they cultivated, and of course we could taste some delicious dishes made with their tomatoes. Even though this was quite some time ago, there is one thing that I tasted that afternoon, that I can still remember like it was just yesterday: an “Asian” tomato salad with cilantro and spring onion, and the most amazing dressing with umami flavors. It was just simply amazing.
Do you also love those delicious granola bars that you can get at the super market? You know, the ones that have that delicious yoghurt coating, and are filled with dried fruits, and oats, and of coarse loads of sugar? Yeahh, I love those as well!! They are delicious but not very healthy, which is why I decided to try and make them myself!
Every month, the food blog swap is organized by several Dutch foodbloggers. The idea is that you make (and adapt) a recipe from another blogger that signed up. That way, you get to know more blogs (which is always fun), and try out someone else’s recipes. This month I decided to join for the first time, and I don’t regret it at all, because the blog I got assigned to is absolutely beautiful! It is called ‘Share love not secrets‘ by Dutchie Marleen, but she also blogs in English! Yay! Her photography style is absolutely wonderful, just as her recipes, so I would highly recommend you to take a look.
