Savory Egg Muffins

A photo of healthy egg muffins with rosemary, pine nuts and veggies. Recipe and photo by That Healthy Kitchen

Normally I’m not really a big fan of eggs, mainly because I’m not very keen on the chicken industry, but for organic eggs I gladly make an exception. These egg muffins are perfect for a Sunday brunch or as a quick on-the-go breakfast, when made up front. You can warm these up in the microwave, but cold they are just as good!

Summer Pizza with a Sweet Potato Crust

Sweet potato crust pizza with goat cheese, rosemary, and lemon. Photo and recipe by That Healthy Kitchen

For the so-called pizza wedstrijd organized by Jamie Magazine NL, I came up with this awesome pizza recipe. The crust is made from sweet potatoes, and the pizza is topped with soft goat cheese, rosemary, pine nuts, fresh lemon zest and caramelized sweet tomato sauce.

Lime Mocktail Smoothie

A photo of two glasses filled with lime mocktail smoothie. Recipe and photo by That Healthy Kitchen

I am definitely a lime lover, especially in drinks, because MOJITO! Yum! Today for breakfast Marco and I had this amazing mocktail smoothie. Because of the pressed lime and lime zest it really is super delicious and has that incredible lime zing. The added yoghurt also brings in some coolness, so this is the perfect summer smoothie in my opinion. We normally have smoothies as breakfast, but this one is delicious enough to have as a small lunch or as a snack! The secret ingredient here really is the lime zest, it really adds an intense flavor to the smoothies.

Clubsandwich with Tomato Hummus

A photo of a clubsandwich with tomato, avocado, iceberg lettuce and tomato hummus. Recipe by That Healthy Kitchen

Today I was really feeling like making some hummus. I love making hummus myself. It is super easy, quick, and cheaper and tastier than store-bought hummus, plus it is super easy to adjust the hummus to your personal taste. Add some beetroots if you like an earthy flavor, tomatoes if you like it a little sweet or roasted pepper for a smokey flavor. For this clubsandwich, I made some tomato hummus. I really like using dried tomatoes for this, as the flavor is a bit more intense than with fresh tomatoes, but if you don’t have them dried, using fresh tomatoes is no problem. I garnished the sandwich with some fresh tomatoes, half an avocado and some iceberg lettuce. Great lunch!

Black Bean Quinoa Burgers with Sweet Potato Fries

A photo of spicy black bean quinoa hamburger with sweet potato fries. Recipe by That Healthy Kitchen

Guys, I have to admit something… My blog might be called That Healthy Kitchen, but sometimes I just really crave unhealthy stuff. Just like most of you I think. So, this afternoon I was really longing a super unhealthy, classic American burger menu, with fries and mayonnaise! Not very healthy, and not really skinny either. Since I had some time on my hands I figured I could also just make my own. This is definitely cheaper than getting a real burger menu at your local fast food restaurant, but also much better for your body and probably tastier too. What else do you want?!

Simple Veggie Bowl

A photo of a big bowl with a simple salad veggie bowl with lentils. Recipe by That Healthy Kitchen

I love having a salad for lunch or dinner, but I am always a bit relentless to actually call it a salad. For me, the word salad makes me think of an unhealthy, skinny, unhappy person, eating dull and tasteless lettuce with a diet coke on the side, slowly just deteriorating into his/her own unhappiness or something.

Okay, that is probably a bit overdone, but you get what I mean right?! I mean, the word salad just kind of has this negative vibe, or for me at least. So, that is also the reason why the title of this blog post isn’t simple salad, but simple veggie bowl. Sounds somewhat less boring in my opinion! Another trick I often use to make my salads veggie bowls more interesting and filling is by adding some whole grains and/or legumes and grilled veggies.
