Black Bean Quinoa Burgers with Sweet Potato Fries

Guys, I have to admit something… My blog might be called That Healthy Kitchen, but sometimes I just really crave unhealthy stuff. Just like most of you I think. So, this afternoon I was really longing a super unhealthy, classic American burger menu, with fries and mayonnaise! Not very healthy, and not really skinny either. Since I had some time on my hands I figured I could also just make my own. This is definitely cheaper than getting a real burger menu at your local fast food restaurant, but also much better for your body and probably tastier too. What else do you want?!

Black Bean Quinoa Burgers with Veggies

Spicy black bean quinoa burgers
Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins
Serves: 6 burgers

Ingredients
80 gram uncooked quinoa
250 gram cooked black beans
40 gram oats
2 tablespoons tamari (gluten free soy sauce)
1 small clove garlic, finely diced
1 teaspoon paprika
1 teaspoon cayenne pepper
2 teaspoons cumin
1/2 tablespoon mustard
2 tablespoons ketchup
coconut oil for baking

Instructions
1. Wash the quinoa, and cook for about 10 minutes or until done.
2. Take the quinoa out and drain as much liquid out of the quinoa as possible.
3. Rinse and drain the black beans and put them in a food processor or blender.
4. Blend the black beans, and transfer the mixture to a big bowl.
5. To the bowl, add the cooked quinoa, oats, tamari, diced garlic, cayenne pepper, cumin, mustard and ketchup and mix well. The mixture should be sticky, but if it is too runny in your opinion, you can add some extra oats.
6. Form six patties and bake them on both sides in a little coconut oil over medium to low heat.

Sweet potato fries
Prep time: 5 mins
Cook time: 10 mins
Total time: 15 mins
Serves: 6 servings

Ingredients
6 sweet potatoes
dash of salt
coconut oil for baking

Instructions
1. Peel the sweet potatoes and cut them into thin, fries-sized strips.
2. Heat a little coconut oil in a skillet over low heat and add the fries.
3. Bake the fries on all four sides until slightly browned.
4. Lastly, sprinkle some salt over the fries.

Dutch “joppiesauce”
Prep time: 5 mins
Cook time: –
Total time: 5 mins
Serves: 6 servings

Ingredients
12 tablespoons (vegan) mayonnaise
3 tablespoons kerrie
1 red onion

Instructions
1. Finely dice the red onion.
2. Mix the mayonnaise with the kerrie.
3. Stir in the diced red onion.
