Spiced whole wheat high protein chia pancakes

Serves: 12 pancakes
  • 140 gram whole wheat flour
  • 270 gram quark (or sub with greek yoghurt)
  • 2 eggs
  • 1 teabag Hug in a Cup by Natural Temptation (use only the tea and spices inside the bag, not the bag in its entirety)
  • 2 teaspoons chia seeds
  • optional: ½ teaspoon baking soda (to make them more fluffy) and 2 tablespoons (35 gram) sugar (to make them a little sweeter)
  1. Put all ingredients except for the chia seeds in a blender and blend until everything is well incorporated. Then, add the chia seeds and pulse a few times to distribute them evenly throughout the batter.
  2. Heat a pan over medium heat and add a little butter or oil to the pan. Spoon in a few tablespoons at a time into the pan and flip the pancakes when they start to bubble.
  3. Serve with maple syrup if you left out the sugar in the batter. Enjoy!
