Sweet & fluffy cauliflower pancakes

Ingredients
  • 200 gr cauliflower, in florets
  • 140 gr (wholewheat) flour
  • 240 ml (almond) milk
  • 1 egg
  • 2 tablespoons (coconut) sugar
  • pinch of vanilla powder
  • 1 teaspoon baking powder
Instructions
  1. Steam (or boil - but I prefer steaming) the cauliflower florets until tender, about 10 minutes.
  2. Let the cauliflower florets cool for a few minutes.
  3. In a blender or food processor, combine the steamed cauliflower florets, flour, milk, egg, sugar, vanilla powder and baking powder, and blend until you have a smooth batter.
  4. Heat a non-stick pan or griddle over medium to high heat and scoop ¼ to ⅓ cup into the pan. Flip the pancakes when you see bubbles forming on the top.
  5. Eat while still warm, and serve with fresh fruit and maple syrup.
