Chocolate Truffles

Ingredients
  • 100g pitted fresh medjoul dates (these dates have a slightly higher water content and are softer than normal dates. If you can't get your hands on these, I would suggest using 85g normal dates and soaking them in hot water for a little while before using them)
  • 25g hazelnutbutter or 25g roasted hazelnuts
  • 3 tablespoons (20 gram) raw cacao powder + more for rolling
Instructions
  1. Control whether or not all pits are removed from the dates.
  2. If you're using hazelnut butter, add the dates to your food processor and blend until a thick paste has formed. If you're using whole hazelnuts, put those in your food processor first and blend until the hazelnuts have turned into a nut butter.
  3. Add the remaining ingredients to the foodprocessor (cacao powder and dates or hazelnutbutter) and blend until a thick dough has formed, but there are no lumps left.
  4. Form 6 truffles from the dough and roll them in cacao powder. Store in the fridge or freezer.
