Italian Zuppa Caprese

Do you guys love Italian food as much as I do? 🇮🇹

I don’t know what happened, but lately I’m SO into all things Italian! Example 1, 2 and 3.

For some reason, I’ve never really understood the Italian food crazy. I mean yeah, I like pizza and pasta, and even tiramisu, but ehm yeah, it’s not that special?! Well, I’ve totally changed my mind! Before starting this food blog, I was already into delicious food, and as a kid I used to bake a lot, but only when I started That Healthy Kitchen I started realizing the impact that good quality ingredients truly have on your food. I mean it when I say that a good quality ingredient can take a dish from okay to wow! And that, my friends, is exactly what Italian food is about: easy, simple recipes that become extraordinary by using high quality ingredients.

Grain Salad with Raspberries, Basil and Walnuts

I’m not gonna spend a lot of time talking about this salad, because it just simply is amazing, and you have to try it too!! You’ll love it ☺️

For the last couple of weeks, salads based on grains like these have been my lunch staple, as they are:
1. Portable
2. Grab-and-go
3. Delicious
4. Make-ahead
5. Filling
6. Customizable
7. Gluten-free (or not, if you want to!)
etcetera etcetera.

I could compile a whole list, of why exactly I love grain based “salads” like these so much. I say “salads” because in my pre-grain based salad mind, a salad is something super boring, with an iceberg lettuce base, some watery cucumbers and tomatoes on top, and if you were lucky you might get some mushy croutons.

Yeah… That doesn’t really gets me excited for food. Buuut, this salad is completely different! There is no iceberg lettuce involved, no watery cucumber and definitely no mushy croutons. I was actually thinking about not calling this a salad, but then, what would it be? Thesaurus describes it as a dish of vegetables, and the synonyms are: potato salad; coleslaw; greens; fruit salad; mixed greens; tossed salad; and Waldorf salad. Not really much to work with right?! So for now I’ll just stay with salad, just know that this is a special salad 😉

Ahh, guys, this sauce is amazing!

Seriously… I don’t think I’ll ever return to supermarket pasta sauce. I just can’t imagine how I ever thought ready made pasta sauce was okay. Ah, well wisdom comes with age, right?!

This sauce is the perfect combination between quick-and-easy and made-from-scratch, and making this sauce will truly make you feel like a domestic goddess, or at least I did. Basically all ingredients for this sauce can be picked from your own veggie garden – or bought at the farmers market if you’re not that lucky.

Simple Zucchini Soup

If you are like me, and are blessed with enormous numbers of zucchinis every summer, this is a great recipe to have in your repertoire to use up that huge summer yield. Zucchinis are a perfect example of summer vegetables, with a harvest peak in July. As they tend to grow very vast, you’ll probably harvest them all around the same time, meaning that you will have a lot of zucchinis at the same time. From experience I’ve learned that they don’t really tend to freeze well, it is best to use them as soon as possible, and freeze the final product, such as this wonderful soup.

Sweet Potato and Lemon Baked FalafelOh my god. Guys, this really might just be the best falafel I’ve ever had. So so so delicious and – important for those of you who want to stay on track with their lifestyle/diet – really healthy too! As these are baked instead of fried, you will get a lot less fat than the normal ones, and besides the oil from the sesame seeds this recipe is fat free yay. I’ve never imagined myself looking for fat free recipes, but recently I’ve started using My Fitness Pal, and I’ve realized how incredibly kcal dense oil actually is. Do any of you use it too? Anyway, if you want these to taste more like the original ones, you can of course bake them with a little olive or coconut oil or just fry them if that is more your thing. Just know that even without all the grease these are still really really delicious :)
